MARINATED SARDA WITH PEAS AND PURPLE POTATOES

Ingredients for 1 serving:

200 g sarda in pieces

1 bunch of dill

100 ml of apple vinegar

100 ml of water

Salt to taste

Black pepper to taste

1/4 tsp chili powder

Red pepper /optional/

For the puree:

150 g purple potatoes

1 tbsp olive oil

1 tsp fenugreek seeds powder

150 g canned peas

1/4 tsp sweet curry powder

2-3 leaves of fresh mint

Salt to taste

Black pepper to taste

How to make:

  1. Stew the pieces of sarda on low heat for at least 40 minutes with finely chopped dill, salt, black pepper, chili, vinegar and water /water and vinegar in ratio 1:1 and the fish should only be covered instead of swimming in the mixture/.
  2. During this time, peel the potato, cut it and boil it.
  3. Drain the potatoes from the water, sprinkle olive oil, salt, black pepper and fenugreek seeds powder and mash well with a fork.
  4. In the same way, mash the peas with finely chopped mint, curry and olive oil.
  5. Serve the sarda sprinkled with red pepper and dill.
