AROMATIC CREAMY SOUP from JERUSALEM ARTICHOKE
The Jerusalem artichoke or earth apple is known for its countless qualities and benefits. In general, I prefer to eat it raw like an apple, but cooked into a soup, it is extremely fragrant. You don’t believe? Make it at home and try the delicate taste of the Jerusalem artichoke in combination with some potatoes, onions, parsnips and more garlic.
Ingredients:
500 g Jerusalem artichoke /about 10 pieces/
300 g potatoes /3 medium potatoes/
50 g onion /1 small head/
4-5 cloves of garlic
1 slice of fresh parsnip /or 2 tbsp dried parsnip/
1/2 tsp fenugreek seeds powder
salt to taste
black pepper to taste /with more pepper it becomes awesome!/
1 liter of water
How to make:
- Peel the Jerusalem artichokes, onion and potatoes, and cut into pieces together with the parsnip.
- Put the chopped vegetables to boil in 1 liter of water for about 25-30 minutes on medium heat.
- When the vegetables are cooked, add the garlic and spices. Reduce the heat and mash until a homogeneous mixture is obtained.
- If the soup is too thick, add water until you reach the desired consistency.
- Serve with finely chopped green onions, parsley, croutons or anything else of your choice. /It tastes especially well with hot pepper/
